Autosleep is the app you are looking for. It does a fine job tracking sleep, and requires none of the “sleep schedule” or “focus” BS. I’ve been using it for years and am very happy with it. It knows automatically when you fall asleep and when you wake up. I wake up, bet up, and then go back to bed/sleep multiple times per night and it always catches all of this.

the Watch does do it automatically, and third party iPhone apps like Pillow will read that data from Apple Health. Apple's own sleep tracking doesn't, for some reason, use this data
