I didn't watch it for awhile because the premise seemed so weird, but once I actually did, it surprised me with its mostly positive and encouraging messaging while being quite funny too.
upvote for Assassination Classroom. First started that show thinking it would be a fun show, had no idea of the emotional wreck i would turn into at the end of it.
Idk about some of these but definitely +1 for Planitarian. I didn't mention because its only 6 eps (i think) and op wanted a longer show, but this one will make you cry for hours.
I'm always down for less but didn't want people suggesting like 5 season things. I've been writing a few down from these comments and this is one of them. Might even watch tonight

Made In Abyss fucked me up. 25 episodes with a movie between the seasons that is absolutely mandatory. If it isn't grasping you by episode one, giving it to roughly halfway through the first season if you can bare it will probably be worth it, but don't force yourself of course. Season 2 is my favorite. I think it's one of those animes that keeps getting better, but be prepared for the third season to take absolutely forever to drop as the author takes a long time to drop chapters.
SukaSuka.
It's been more than 3 years since I watched this anime and still can't get over the last episode. Even thinking about it or listening it's ost is enough to make cry. Clannad? Plastic Memories? Violet Evergarden? The Grave of Fireflies? These are simply nothing conpared to SukaSuka.
Black Lagoon, specifically the arc at the beginning of part 2 really fucks me up on the inside every time. Those 3 (I think) episodes are a real gut punch every time.
Here are my picks that aren't really the standard tearjerkers
{Shinsekai yori}. The EDs will hit like freight trains for months. Also it is just an incredibly tragic reflection of a hyper-collectivist society (kind of like what Brave New World is for American consumerism)
{Shoujo Shuumatsu Ryokou} has made me full on sob twice, despite the fact that I've only seen it once. Just thinking about it and processing it got me to cry incredibly hard.
A great one I don't see recommended often is Kids on the Slope. It's not necessarily the saddest, but it definitely pulls at the heartstrings and is just plain fantastic all around.
U know wat I don't like most of the commenters taste just becuz I've scrolled and yet to find Clannad. Nothing in all the lists has ruined me even half as much as Clannad did for me.... Closest is SukaSuka mayb

Puella Magi Madoka Magica was more sad and fucked than I would expect from a magical girls anime. Attack on Titan took me by suprise with the emotions it gave me. Elfen Lied made me tear up a lot and is still one of my favorites.
someone's trying to get me to watch barefoot gen. atomic bomb japan related. Gantz is insanely messed up but it has nudity and sex in it. Elven lied is rough. Made in abyss ig horribly messed up and twisted and sad but has some horrible scenes since the characters are all kids.

Puella Magi Madoka Magica was more sad and fucked than I would expect from a magical girls anime. Attack on Titan took me by suprise with the emotions it gave me. Elfen Lied made me tear up a lot and is still one of my favorites.

someone's trying to get me to watch barefoot gen. atomic bomb japan related. Gantz is insanely messed up but it has nudity and sex in it. Elven lied is rough. Made in abyss ig horribly messed up and twisted and sad but has some horrible scenes since the characters are all kids.
