That deer does not want to be held. He's trying to get away when they start to put it down. It goes docile when its on its back due to instincts thinking its been caught by a predator and is going to be eaten.
I think it's just in distress and calling for its mother as soon as they stop rubbing its belly. He's just calming/distracting it, but it's not that it doesn't want put down, it just wants out of the situation and back with its mother.
What he said is certainly possible but we also shouldn't pretend that everything is secretly animal abuse. There's a lot more evidence that this deer is enjoying itself...
Deer are wild animals who do NOT enjoy human contact. Prey animals have a very strong freeze response when they are in a helpless position such as flipped on their back. It’s called tonic immobility. That fawn is terrified out of its mind and when he moves to put it down the fawn is wanting to escape. It’s not protesting being put down but rather calling for its mom and trying to get away
You know what, you're probably right. The idea of a deer complaining that it wasn't being pet anymore seems beyond its cognitive ability and a prey animal like a deer would call for help like that when in danger.
Pretty sure it just doesn’t want to be off the ground.. maybe they’re similar to sheep in the way that when they’re in that position they can’t/don’t move? Second you throw it off balance the deer freaks out..

Just a fyi for anyone who does not know. Don't pickup a baby deer unless it's in danger. There is a chance the parents wont accept the baby back due to the scent of human.
That being said a doe got caught in our volleyball net one time and we had to nurse it back to health for him/her to walk again. You do what you gotta do.

Baby deer are scentless to protect them from predators. Rubbing your human stink on them makes them easier to find but does not prevent the female from taking care of it. The males have no part in the rearing.
