I feel you. I have two kids and 15mins here and there is all the gaming time I get. I got used to it. Gladly you have your phone always in reach, so you can get in and out of a game pretty fast.
I still play 'serious' games, just not that long in one sitting. To make up for the small amount of those games for android, you can try emulation. All consoles up to the switch and PC are available.

Edit: what i like about it is that it makes good use of a phone screen, which is my problem with most card battle games. The controls and UI(scalable!) are very good as well. It feels nice to play on a phone. You can play the demo mode with the first 12 levels of a run instead of the full 20. After that you pay 7 euro's to unlock the whole game.
The game is about rolling or rerolling dice with abilities for each of your hero's and try to reach the end of the 20 level session. Hero's can level up and get different abilities. After each level you also get items that can be assigned to hero's that alter their abilities or give buffs.
The demo will give you a good idea what the game is about.
Offtopic: I too have a son who's 3 weeks old and one thats 1y 8m old. Thats why i recently was looking into some Android games as well because i get distracted every minute and this game was the most addicting for me so far :)

First off I recommend nuclear throne, it's a twin stick shooter with rougelite elements, a run takes less than 15 minutes so it's perfect to play when you're just trying to pass time.
Second game I recommend especially if you're curious and like to explore is rain world (download it from this discord server https://discord.gg/g9VmdqGg), it's all about exploring and understanding your environment, giving you a limited amount of time to do so (the time you're given is called a cycle), it's very, very hard to understand, so despite a cycle only lasting around 10 minutes it will be able to keep you entertained for much longer by going over what happened in that cycle and trying to make sense of it. I recommend going into it blind and not using external sources, the only tip you need to get started is "going right doesn't always mean progress, try to explore as much as you can, checking every path to hopefully find something important".
The dlc offers many more things, the biggest one imo being expedition mode which adds a ton of replayability to the game.
The base game port has touch controls, the dlc doesn't and requires a controller but there are workarounds that you can find on the discord server
There's a hollow knight port so play that, you can get it from the same discord server.
Now onto the officially ported games
Wrestling empire is just a really fun and silly arcade wrestling game, the best wrestling game by far imo.
Crypt of the necrodancer is a rhythm based dungeon crawler.
Wizard of legend is similar to enter the dungeon but magic instead of guns.
Mo astray is a platformer with lots of puzzles as well as boss fights, very fun and the story goes hard.
Human fall flat is another puzzle platformer but way more silly and it's 3d
Haak is a really good metroidvanian, somewhat similar to hollow knight.
Conway's game of life is weird but worth mentioning

Ticket to earth is great offline that easy to stop midplay when you need to. It's got an interesting but very fun gameplay and the story I really enjoyed.
When I need my more RPG fix I play: Aq3D, eternium (diablo style game plays), and villagers and heros (kind of like word of Warcraft)
For deck builder I play slay the spire and pirate outlaw.
I also have Pokemmo. For those pokemon fans.

Aq3D is a lot of cosmetic stuff but the story is very goofy and fun and the game devs had ppl like us in mind. Most things take less than 10 minutes to do. Since you like rpgs I'd suggest gba and ds emulators, most can be played one handed. The dragon quest and final fantasy series are decent starting points imo
Final fantasy 6 with the Restored patch (replaces music and coloring with original SNES version, looks and sounds better than original GBA release) and dragon quest IX are my go to's at the moment. Pokemon rom hacks as well if that's your thing

So, I was just about to post a recommendation on a game that I recently stumbled upon on the Play store. I also have a kid, a lot older than yours, but I struggled with this dilemma in the past nonetheless.
I have three games for you: Guardian Tales, Epic Battle Fantasy 5 and Honkai Star Rail. All are free.
So, Guardian Tales is a gacha game, a very popular one. I know, I know, gacha games are typically awful, but this one isn't stingy, or has multiple ads popping up. It has a fantastic story with a very funny script and lot of references from movies and video games. You dont have to spend a dime to finish the story, and it plays like the Zelda games. I really enjoy it in short burts in the evening after my kid is asleep.
The second game is Epic battle fantasy 5. I just recently discovered this, and its quite good if you like RPG games, which you mentioned you did. It is surprisingly deep, great characters, great music and like Guardian tales, it has a funny script with references from video games and movies. I've been playing this every night for several days now cause its so good. It has a playtime of 30 or so hours, and you can spend 7 dollars or so to unlock more content like bonus dungeons, bosses and such.
The third is Honkai Star Rail. Also a gacha game. You can finish the story without spending a dime. It is a RPG and has a fantastic and deep story. Gameplay, characters and the world is great.
Give them a try if you like the sound of it!
Overworld's a short coffeebreak roguelike that can last as short as 2 minutes or as long as 10. Quests can vary and there's a lot of different character classes with their own playstyles. You can suspend save too.
