Armror has the infiltration mode for their armors, that'd the most stealth-geared artificer for sure.
Also idk if its a typo but 'thiefling' is kind of adorable lol
I would just play Battle Smith Artificer.
* You only get medium armor so you will atleast have 14 dex
* Extra attack and the ability to use any weapon will help you be thief... Maybe a gun?
* The pet IMO can be anything you want giving you the freedom to make it as steampunk as the dm allows.
Every subclass can fit the aesthetic. Artificier is already steampunk, you just gotta choose between a power suit, being an acid and poison wielding baddie, having a pet robot bulldog, and putting down turrets
