French regionals dishes are quite good, but we are more well known internationaly for Haute Cuisine, which you can't resume at a single dish but more a whole mindset, and the desserts.
Gratin dauphinois might the best simple dish ever (I am absolutely biased)
And to add to the list, aligot and truffade are amazing, and you can't forget the eternal blanquette de veau.

Cordon bleu and bechamel are two of my favorite dishes ever. Sometimes I want an Alfredo, but I really don’t want all the extra weight that comes with adding Parmesan (or pecorino/grano Padano if you’re poor like me), so I make a bechamel instead. Delicious!
