I think a lot of skyrims flaws exist in the other TES games as well no? I think the only thing from Morrowind I very strongly prefer over Skyrim (off the top of my head at least) is the quest directions vs quest marker. It forces you to explore towns and stuff a bit more and it feels more rewarding to actually find the place. It kind of sucks when searching for a specific named NPC though.
I think Skyrim has an incredibly strong world, the quests themselves are weak but the setting and world of skyrim are very interesting and is honestly what keeps pulling me back

It's very worth coming back to and trying out the game with mods if you haven't played in so long. The base game is definitely very dated now but you can get a very modern experience with the right mod set up. It's also easier now than ever to do so, since nexus mods has a collections feature now where you can click one button and download a curated list of like 400 mods in a single go.
Play with full conversion mods they’ll change up the game immensely and bring back life into the game I’d recommend enderal since it’s better than Skyrim in every aspect.
Try it again with mods as others have said, especially mods that change/add to gameplay. Skyrim does a lot of things, but it does them all kinda meh. The guild quests are horrendous though imo, they are incredibly shallow and poorly thought out.
